Boston Baked Beans and Pork

Hearty, great tasting and economical meal.

Ingredients
250g dry haricot beans
500g cheap bacon or ham hock, diced. (Lean pork can be used also)
oil
1 large onion, chopped
1 clove garlic, crushed
4 ripe tomatoes, peeled and diced
1 bay leaf
1 sprig thyme
1/2 teaspoon dried marjoram
3 tablespoons dark brown sugar
1 tablespoon treacle  or molasses
1 tablespoon tomato paste
1 teaspoon Angosturo bitters
2 teaspoons dry mustard
salt and pepper
1/4 cup water or tomato juice
Method
Cover dried beans with water and soak overnight.
Heat oil in frying pan, cook meat until well browned.
With a slotted spoon, remove meat from pan.
Fry onion in remaining fat. Add garlic to onion.
Layer drained beans, onions, chopped tomatoes in Crock Pot.
Spoon meat on top, place herbs, tied in bouquet on meat.
Mix together sugar, and treacle/molasses, tomato paste, bitters, mustard, salt and pepper and water.
Spoon over ingredients in Crock Pot. Cover and cook for approximately 8 hours on LOW or 4-5 hours on HIGH. Remove herbs to serve.
