Pea and Ham Soup

All time favourite Pea and Ham Soup is quick and easy to make, especially in the Crock Pot.

Ingredients

1 - 1 1/2 cups yellow and green dried peas

1 onion, diced

2 bay leaves

1 sprig thyme

pepper

1 medium smoked ham hock

6-8 cups stock or water

Method

Rinse peas and place in Crock Pot.

Add onion, herbs, pepper and ham hock.

Cover with as much water or stock as preferred.

Turn to LOW and allow to simmer for at least 8 hours.

This soup improves with long slow cooking, so 10 - 12 hours will enhance flavour even more. Remove bay leaves and thyme.

Remove ham hock, cut off fat, chop meat and replace in soupl

Serve hot with crusty bread.
