Vegetarian Chili Hot Pot

Great, tasty vegetarian meal which the whole family will enjoy.

Ingredients

2 x 450g cans peeled tomatoes

1 x 450g can kidney beans, rinsed, drained

1 x 450g can borlotti beans, drained, liquid reserved

1 onion, chopped

2 stalks celery, chopped

1 green capsicum, chopped

1 tablespoon chili powder

1/2 teaspoon minced garlic

200g pack macaroni

1/4 cup butter

Method

Spray 5 quart crock pot with cooking spray.

Combine tomatoes, beans, onion, capsicum, celery, chili powder, garlic and 1 cup of water.

Cover and cook on LOW for 4-5 hours or on HIGH for 2 hours.

Cook macaroni, drain and stir in butter. Fold through chili.

Serve topped with grated cheddar cheese.
